Loin of pork with coffee
Ingredients (4 people)
4 slices of pork
6 onions (chopped)
1 tablespoon of grinded coffee
1 tablespoon of butter
1/2 glass of water
4 tablespoons of liquid cream
Salt and pepper
Preparation:
Fry the onions in a little oil. When they are ready, add the meat and cook. When golden, season with salt and pepper and let it cook for 10 more minutes. Put it aside.
In a pan, mix the gravy,the coffee, the water and the cream (in this order) and stir it well.
Pour the sauce over the meat.

Coffee chicken
Ingredients for 4 people
2 cloves of garlic
1 chicken of 1 1/2 kg.
1 cup of very strong coffee
2 tablespoons of flour
1 glass of white dry wine
1/2 teaspoonful of grinded black pepper.
1/2 teaspoonful of marjoram
1 small cup of pork lard
1 onion
Salt
Preparation:
Grease the chicken with the lard. Add salt and pepper
Chop the onion
Place the chicken in a tray, add the wine and a small cup of water.
Put it in the oven and bake until golden. Pour its own sauce over from time to time.
When ready, put the chicken on a plate and the sauce in a saucepan. Add the crushed garlic, the coffee, the marjoram and the flour dissolved in water to the sauce. Mix.
Put the sauce into the fire until it is thick.
Pour it over the chicken and bake it again for about 10 minutes.

Coffee Sauce (for meat)
Ingredients
1 cup of strong coffee
50 g. of butter
2 teaspoonful of strong mustard
2 teaspoonful of English Sauce
A few drops of Tabasco
Salt, pepper and sugar.
Preparation:
Melt the butter. Add the rest of ingredients and boil them until the sauce is ready.

Coffee flan
Ingredients
7 eggs
7 tablespoons sugar
1½ cup evaporated milk
4 teaspoons instant coffee
½ cup water
½ teaspoon vanilla
¼ teaspoon ground cinnamon
Preparation:
Caramel - Melt 1cup sugar in a non-stick pan, over low heat. Keep your eye on it. If it burns you will have to start over. It just needs to melt that's all. Immediately pour the caramel into a metal pan and swirl it around to cover the bottom and sides. Your have to be quick because once it starts to cool down you don't stand a chance. The caramel should have cooled down before you pour the egg mixture in it.
Beat together eggs and the 7 tablespoons sugar; add milk, instant coffee dissolved in water, vanilla and cinnamon. Carefully pour into prepared pan and bake at 350º in a "baño de Maria" (bain marie) for about 50 minutes or until golden. Test with a fork, it should come out clean. Remove from oven, cool and refrigerate at least 3 hours.

Coffee mousse
Ingredients
112 Grams Butter (at room temperature) -- (4 ounces)
2 Tablespoons Instant Espresso Coffee
2 Tablespoons Warm Water
3/4 Cup Sugar
5 Egg Whites
1/4 Cup Dark Sweet Chocolate, Finely Grated
Preparation:
1) Put the butter in a mixing bowl and blend well with a spatula or a wire whisk. The butter must not be cool. If it is cold, it will not blend.
2) Blend the coffee and water and add it to the butter. Add 1/4 cup sugar and beat to blend.
3) Beat the egg whites until partially stiff, using a wire whisk. Gradually add the remaining 1/2 cup sugar, beating constantly with the whisk until very stiff.
4) Add half the whites to the butter. Beat well. Add the remaining whites and fold them in with a rubber spatula.
5) Fold in the grated chocolate.
6) Chill until ready to serve. Serve in stem glasses.

Pear and coffee cake
Ingredients
For the dough:
150 g of butter
350 g of flour
1 tablespoon of sugar
2 tablespoons of powder coffee
1 egg
For the filling:
1 Kg of pears
2 beaten eggs
75 ml of thick cream
2 tablespoons of instant coffee
1 glass of coffee liquor
Preparation:
Mix the butter with the flour.
Add the sugar and stir it will together with the coffee and the egg
When the dough is not sticky, roll it and put it in a cake mould
Bake it for 15 minutes at 200ºC.
Put the pears, peeled, emptied and cut in two in the mould in a circle.
Pour the cream, the coffee, the eggs and the liquor previously mixed.
Bake for about 30 minutes and serve.

Coffee crêpes
Ingredients
4 teaspoonful of instant coffee
200 g of flour
1/4 Kg. of sweetened cream
1/4 litre of milk
4 eggs
2 tablespoons of sugar
1 small glass of rum
50 grs. of flour
Preparation:
In a bowl, mix the flour, the sugar, the eggs, the milk, the rum and 2 teaspoonful of instant coffee.
Melt a little butter in a pan
Pour 3 tablespoons of the mixing and move the pan so as the mixing covers the pan totally.
Turn it
Put the crêpes in a tray
Prepare a cream with 2 teaspoonful of instant coffee, mixed with the cream.
Serve the crêpes with the cream on top.

Coffee chantilly
Ingredients for 4 people
400 g of fresh whipped cream
100 g of icing sugar
2 teaspoonful of instant coffee
orange grated rind
Preparation:
Whip the cream
Add the coffee, the icing sugar and the orange grated rind
Serve cool not frozen.

Tiramisu
Ingredients
30 Italian ladyfingers, divided
2 1/2 C. strong warm espresso
2 ounces chopped chocolate, divided
Unsweetened cocoa, for dusting
6 egg yolks
3/4 C. sugar
1 1/4 lbs. mascarpone cheese
2 C. heavy cream
1/3 C. sugar
1 1/2 T. dark rum
Preparation:
Dip the first 18 ladyfingers in the espresso, and line the bottom of the 12 x 9 pan with them. Sprinkle half of the chopped chocolate, and add a generous dusting of the cocoa to the ladyfingers; set aside.
Combine the yolks and 3/4 cup of sugar and mix on high with a mixer about 10 minutes. By hand, mix in the mascarpone until incorporated and relatively lump-free; set aside.
With a mixer or by hand, whip the cream, 1/3 cup sugar and rum until stiff peaks are formed. Add the mascarpone mixture and whip again until homogeneous.
Spread half of the egg/cheese filling on the ladyfingers in the pan. Soak the remaining ladyfingers in espresso and make a second layer (with spaces in between the ladyfingers). Sprinkle with remaining filling evenly over the ladyfingers, and lightly sprinkle with more cocoa.
Wrap, refrigerate and chill 4 to 6 hours. Before serving, sprinkle again with a light dusting of cocoa. Slice and serve with a spoon or spatula.
